Did you know that Austrian Eiswein needs to freeze naturally at chilling -7°C? The 2023 vintage was harvested on December 4th, starting at 4:00 AM! The magic happens when the grapes are pressed while fully frozen, with the water inside forming ice and leaving behind a rich, concentrated nectar.
But here’s the challenge: as the climate warms, producing Eiswein becomes increasingly rare. In the 80s and 90s, we could make this liquid gold 8 out of 10 years. Now? Only 3 out of 10.
The 2023 vintage resulted in just 4,000 bottles of 0.375 liters, and who knows when we’ll get another chance to capture this? Don’t miss out!
