Gerhard’s favorite dessert

 

Kaiserschmarrn a traditional Austrian dessert has held a place of honor on the Kracher family table and in their hearts for three generations. Gerhard Kracher not only continually perfects his wines but also his cooking skills. He proves that impressively in the video with his take on this classic dish. And because true classics are meant to be shared here is the family recipe:

Ingredients

  • 4 eggs
  • 300 milliliters whole milk
  • 125 grams flour
  • 50 milliliters sparkling mineral water
  • 60 grams sugar
  • 1 packet vanilla sugar
  • 50 grams butter
  • 1 pinch of salt
  • Powdered sugar for dusting

Preparation

  • Separate the eggs and beat the egg whites until stiff
  • Mix the yolks with sugar vanilla sugar and salt
  • Add milk flour and sparkling water and stir until smooth
  • Carefully fold in the beaten egg whites
  • Heat the butter in a pan
  • After five to eight minutes the bottom should be golden brown
  • Tear into pieces and flip
  • Let cook for another five to eight minutes on the other side
  • Tear again and cook for one to two more minutes
  • Serve on a plate and dust with powdered sugar
